About the wine
This rich and complex Basque speciality white is close to Tao's heart and his childhood home
-
Tao Platon grew up just a short drive from the Biscay vineyard where this wine was made. So it’s full of childhood memories of the people, places and delicious Basque country food he enjoyed growing up.
-
This wine comes from a picturesque single vineyard with ideal grape-growing conditions. Its steep, south-facing clay soils, warm sunny weather, and cooling sea breezes make for super-ripe Hondarrabi Zerratia fruit - a local variety that grows in small-berried bunches, concentrated with lush and aromatic flavours. As soon as Tao laid eyes on this beautiful patch of grapes, he knew he couldn’t pass up the opportunity to make a wine here.
-
Txakoli is a Basque speciality that growers have been making there for generations. It’s a classy white with lots of lovely texture and minerality and just the slightest hint of a sparkle. It’s not a fruit bomb but its fresh and complex aromas - laced with tropical fruits, fresh nectarines, yuzu, and pineapple… with a subtle floral and herbal tinge - will charm your socks off.

Serving advice
Chill to normal fridge temperature (6-7°C). If it then warms up naturally in the glass to 8-10°C, that's perfect. We prefer to keep it cool in ice water, not pure ice.
Food match
It will work wonderfully with all kinds of shellfish and seafood, especially fatty fish like tuna and salmon (sushi, sashimi!). However, it also has enough intensity to harmonize well with dishes that are traditionally considered to be difficult to match, like Asian stir-fries that include some sweetness or slightly spicy pasta dishes.

Wine profile
Meet the winemaker - Tao Platon
-
As a youngster, Tao Platon took a leap of faith when he swapped his degree in Chemistry for Oenology - not knowing what to expect - but science’s loss was winemaking’s gain, as Tao discovered a true passion that he could dedicate his life to.
-
After finishing his studies, Tao travelled the globe to work harvests in some of the world’s most famous wine regions, including Bordeaux, New Zealand, the Spanish Douro and Burgundy, where he learnt all about different winemaking techniques and approaches. A true student of his craft, he never stopped learning and to this day, when he’s not in the vineyard, you can normally find Tao swotting up for his next big wine test.
-
With a wealth of experience, meticulous attention to detail, and a special appreciation for unique and rare parcels of fruit, Tao now makes exquisite fine wines in select vineyards all over his Spanish homeland. Your support has given him the opportunity to save more small patches of overlooked grapes and turn them into first-rate nectar.

This is a remarkably interesting wine! It has an intriguing complexity which displays in its bouquet, opening and expanding in the mouth and its lingering finish. Its sharper facets lend distinction and structure. Excellent value for money as its uniqueness allows a comparison with wines double its price.

Golden coloured with high acidity, a medium body and dryness. Flavours of ripe green apples, lemony citrus, pear, nectarine, and some ginger from ageing with subtle petroleum notes on the nose. Balanced with zingy flavours, and complexity from ageing providing more body. A very nice wine.

Too sharp for my taste, and dear for the quality.

A very nice wine.
Lemon and pineapple fruit, with a honeyed sweetness to balance the bright acidity.
It has been a mostly sunny day here, and I'm not going to be deflected by a short shower about an hour ago. I've opened a bottle of Vino Atlantico Txakoli 2021. I rated the 2019 at 4.5, and this is every bit as good.
Enjoy your evenings, everyone.
