I think that this meal was fairly healthy too, veggies and halloumi fried off in a little Extra Virgin Olive Oil. The veggies in this were sliced tomatoes, sliced courgettes, red onion and butter beans.

If you like the sound of making this non-veggie by adding some nduja paste to the mix - this works a treat too.

Topped off with home-made *croutons.

*Made from a cubed Spelt & Rye loaf tossed together with EVOO, minced garlic, parmesan plus seasoning.

My 2020 TINO Napa Valley is live!

TINO is big, smooth, and all about the art of blending to create something truly unique. Each component presents something different to the blend. The 2020 vintage is a blend of Cabernet Sauvignon and Petit Verdot. I harvested grapes from Oakville and Rutherford- to achieve that rich and ripe mouthfeel.

Visually, TINO is a dark red-purple - the Petit Verdot really comes through – with lifted floral, purple fruit, and toasty oak aromas and a rich, intense, and fleshy palate.

If you enjoy bright, young vibrant fruit, then drink this wine over the next two years. If you prefer more complexity from bottle aging, it will easily cellar seven to ten years.

I recommend serving TINO at cellar temperatures – around 15C – and decanting around 20 minutes. It is a great wine to pair with hearty food such as BBQ meats.

Get it while it lasts!
