Best before
It's definitely good to go now, but it should develop and improve for 3-5 years and it will continue to drink well for at least a further 5 years or so. With bottle age the tannins will smooth out and become softer while the fruit will mellow from fresh and bright to flavours of dried or preserved fruits with deeper, richer undertones.
Serving advice
Open and decant (or double decant) before serving to introduce oxygen and open the wine up - preferably for an hour or more.
At the moment the wine is like a flower bud, closed and preserving its great aroma and flavour potential. Allow the wine to breath and compare the difference! The wine will blossom and release its generous aromas and flavours.
Sediment shouldn't be a problem, at least in the early years.

But here's the basics:
- Ignore the wax
- Go straight in through the wax with the cork screw
- Pop the cork in the usual manner
- If necessary, tidy up the rim of the bottle afterwards with the blade of your wine knife.
Food match
This is steak wine.
Best paired with juicy, flavoursome cuts like rump or t-bone, done simply on the BBQ.
... Just try not to trim off too much of the fat!! Tannin in red wines goes particularly well with a fats and oils - which is why cheese is always another good option!
Rich or spicy tomato dishes and pastas are also fair game for our spicy, savoury Shiraz.
