A resurrection of an ancient beer style brewed in Ireland from the neolithic era; up until the 1700's. This Gruit Ale utilizes Irish Heather tops in place of hops to balance the sweet rich malts used. Since these ancient brewers would not have known what yeast was fermentation was carried out by wild yeasts and bacteria creating a naturally tart ale. Festival special we decided to age this beautiful Gruit in a classic French red wine barrel for extra depth of flavour.
