About the wine
The perfect drop for anyone who loves the classic Cabernets of Bordeaux and Napa
- The 2021 Ode Napa Valley Cabernet Sauvignon has a dark garnet colour and a rich nose of blackcurrant, black cherry and sandalwood. It has a high toned, velvety attack, a concentrated mid-palate and a long supple finish of enrobed tannins.
- Aged in 25% new oak, half French, half American, to give the rich aromas of French barrels and the sweet vanilla of American, without the harsh tannins.
- It has richness, concentration and pedigree, perfectly expressing the terroir and vintage, without high alcohol or residual sugar… truly delicious.
Best before
I believe this wine will improve with age for 15 to 20 years given proper cellar conditions.
Serving advice
During the first year after release, I would recommend decanting the 2021 Ode Cabernet Sauvignon.
Food match
I love pairing this wine with ground lamb burger from Brown's Valley Market butcher, served on Model Bakery english muffins with grilled Yukon Gold potatoes as a side. A nice mimolette cheese is a good pairing as well.
